Hi. I am looking into getting a set of 15x8 wheels with a 25 mm offset. I wanted to know what tire size would be recommended for minimum rubbing, and if I would need to roll fenders. I have an FM suspension, so i'm about 1" lower in the front, 2" lower in the rear (I think, I can double check if it's necessary)

I have 205 50 15s with 15x8 +25 @ 13" ride height and it rubs once in a while without rolled fenders, in the back.

I have a 15x8 +23 with 205/50/15 Azenis which are beefier than most 205's. My ride height is @ 12" hub to fender, and the inner fender lip was trimmed and the tabs bent up. there is only slight rubbing on hard turns and big dips. but yeah you will probably need to rolls the fenders unless you go with 195/50 series. heres a pic of mines
