SO easy to do...just find where you want to mount the mirrors, mark the holes, pilot drill & drill to full size, then mount the mirror using backing washer plates, bolts, and nuts. Should be doable in an afternoon. The bigger issue is filling the old mirror holes...that'll take some Bondo or something like that to fill.
I saw a guy use hot rod peep mirrors mounted to the edge of his hood... it was pretty slick totally reversable and cheeep. but I bet the vibrations would make them useless as mirrors while moving though.
